Dining

Chef Estremera learned the essentials of cooking, and most particularly his native Peruvian cuisine, during his formative years while working in his family’s restaurant. It was here that his love for the culinary arts developed, and he utilized his acquired skills to launch his career as a chef. Chef Antonio has a discriminating palate and is well versed in many culinary styles from Continental to Cuban. Introducing Costa d’Este Beach Resort’s new Executive Chef Antonio Estremera, it’s time to really fall in love with the magic, spices & flavors of Peru (and the world). Please help us welcome Chef Antonio into The Wave Kitchen and into our community!

Costa d’Este Beach Resort welcomes Chef Antnio Estremera into The Wave Kitchen & Bar, an ocean-front dining space with amazing views of the Atlantic. The restaurant offers a menu directly sourced from local farmers, fishermen and artisanal purveyors. “Costa d’Este has had the generous support of the vibrant Vero Beach community over the last few years, and we wanted to invest in our backyard,” states Ed Riley, General Manager. “We’ve partnered with local farms and purveyors to highlight the best culinary ingredients available in the region and support the local economy.”
The Wave concept was designed to offer a dining experience similar to what one would encounter at a hospitable and cozy dinner party at a friend’s home with generous attention to detail. The open kitchen and customizable selections aim to engage guests. In addition to classic selections like Center Cut Filet Mignon served with Sauce Béarnaise and Pork Tenderloin served with Natural au Jus infused with Port Wine, diners are able to customize entrée selections with choice of preparation style, sauce and temperature. The Wave will also feature select Cuban specialties developed by Costa’s owners, Emilio and Gloria Estefan, for their Estefan Kitchen cookbook.

The Wave Kitchen & Bar states its commitment to local partners on its menus: “Our aim is to use local ingredients with respect to seasonal harvests as the produce achieves its full culmination of flavors. We believe in products that are natural and pesticide free from local farms such as:; Osceola Organic Farms - Vero Beach, Sealed Sweet - Vero Beach, K&M Treasure Coast - Fort Pierce, B&W Growers - Belle Glade, Alderman Farms - Boynton Beach, Winter Park Dairy - Winter Park, Green Sky Growers - Winter Garden, Pero Farms - Clewiston, & Devil’s Garden.”
