Tender is Rare

When I got my first restaurant job. I was told that great restaurants want their guests to leave thinking, “great food, great atmosphere, great conversation, and great service I just wish I could remember the server’s name.”
By all accounts Luxor’s premier steak and seafood restaurant, Tender, is top-notch.
Great Food? Oh, yes. We started with caprese salads to share, which were divine. I’ll be honest, I’m a sucker for heirloom tomatoes and when they are served along with Buffalo Mozzarella, extra virgin olive oil, salt, and freshly cracked pepper from our table’s own pepper grinder I give up all pretense of intelligent critique. I’m in heaven and we haven’t reached the main course yet.
When the main course is served it is apparent that I am going to be trapped in a pleasure prison for the duration of the dining experience. Tender may be a steakhouse first and foremost, but sweet lord can they handle a fish. I had seared yellowfin tuna with a sweet chili pepper vinaigrette. Those that ordered meat claimed that I was missing out and I would have proved them wrong, but I had already devoured everything on my plate and couldn’t give them a taste of superiority.
And then there were the sides. Alongside wonderfully prepared classics such as asparagus drizzled in lemon citrus olive oil we had the special mashed potatoes with, wait for it, white truffle shavings.
Yes, apparently Luxor has the keys to paradise…and my heart.
On to the atmosphere. Dark wood paneling, sexy lighting. I felt like I was in an episode of Mad Men. Seriously, it was that cool. I wanted a cigarette and a martini. The cigarette was a no go, (this is the 21st Century and even Las Vegas’ restaurants have instituted a smoking ban) but the martini almost had me referring to myself as Don Draper.
How was the conversation you ask? Come on, that is a no-brainer. All my compatriots are accomplished conversationalists and of course I studied with the lovely linguist Gabby Gregarious in Greenwich.
Service? Our server was attentive, informative, obsequious, and all around amazing. A server’s greatest gift is the ability to seem to exist only when you need them. Your water glass is always full, but you never notice anyone filling it. Dishes are cleared without interrupting the flow of the meal. Our server kept us informed, but didn’t overwhelm us with details. He was perfect.
It isn’t easy to create great food. Creating great atmosphere is like walking a tight rope. Great conversation is the job of the diners. But, great service is a nearly forgotten art and an overbearing server can dominate your experience distracting from everything else.
Luxor’s Tender has something rare in the quality of their service. Something beautiful.
